19. Carthusian Dumplings.
Remove the crust from a wheaten loaf, ent it into four pieces, and soak tliem in an egg mixed in a pint of milk; take two ounces of pounded almonds and the grated crust of the loaf, squeeze out the pieces somewhat, mould tliem round, roll them in the almonds and grated-bread crust, and fry them in swim- ming butter tili they are brown, then roll them in sugar and cinnamon. You cau use any kind of sauce witli them, according to taste.
20. Filled Milk-rolls.
Rub off the ernst of four milk-rolls, on a grater, and make ineisions about the breadth of your finger apart, into each, nearly throngh (but you must take care not to cut the rolls entirely throngh). Fill these ineisions with the following ingredients :—shelled almonds, cut lengthwise, well picked and washed currauts and raisins, in equal quantities, two table- spoonfuls of citron, ent into little dice, a tea-spoonful of grated lemon-peel, the same of grouud cinnamon and three table- spoonfuls of fine sugar, all of which is to be well mixed ; now, after the ineisions of the milk-rolls are filled, tie them round with a piece of twine, let them soak well in eight whole eggs, which liave been well beaten up with three half pints of cold milk and a little salt, then put them on a coländer to draiu off, fry them on all sides to a nice gold yellow colour, let them stand for a few minutes upon blotting-paper, take off the twine, turn them in sugar, dish them with some appropriate sauce, and serve them up.
21. Cracknels with Yeast, for Hallow E’en.
Beat for fifteen or twenty minutes, into a batter, the following ingredients :—a pound of dry flour, five table-spoonfuls of yeast, a whole egg, the yelk of an egg, as much salt as you can put on the point of a knife, and the proper quantity of lukewarm milk—say about three quarters of a pint. Cover this batter with a cloth, and put it in a pretty warm place to rise. After an hour and a half, or two hours, when it has risen to tvvice
